Uttarayan Special Undhiyu

Undhiyu is Gujarati special dish prepared using mix vegetables and Methi muthiya. In Gujarat on Uttarayan (Festival of kites / kite flying day) most of the people 90% eat Undhiyu.
it is spicy in taste.

People also prefer to eat in winter as all fresh vegetables are available in the winter. You can add available ingredients.

There are many variations of Undhiyu like Kathiyawadi , Surti etc.. 
Here I am showing you recipe of  Uttarayan special (Kathiyawdi ) Undhiyu. 


Ingredients : 
  •  potato  
  • eggplant (bringle )  
  • full gobi
  • green mutter
  • green Chilly 
  • papdi  
  • Desi Chana 
  • Banana (Optional) 
  • Tuvar dana 
  • Tomato 
  • Lemon (Nimbu) 
  • Cooking Oil 
  • Green peas  
  • Salt to taste 
  • Water  
  • Asafoetida
 
For Methi Muthiya :
  •  Chopped Fenugreek leaves (Methi) 
  • Gram flour (Besan) 
  • Coriander (Hara dhaniya) 
  • Salt 
  • lemon (Nimbu) 
  • Red Chilly paste 
  • Garam masala 
  • sugar 
  • Hing 
  • Dhaniya pawder 
  • Food soda 
  • Cooking Oil
For Stuffed Green Chilly 
  • Green Chilly 
  •  Gram flour 
  • jaggery (Gul)  
  • lemon (Nimbu) 
  • Salt
Stuffed Banana  (Optional)
  • Half ripped Banana 
  • Red chili and Garlic paste 
  • Salt 
  • Turmeric powder (Haldi) 
  • Dhaniya powder 
  • Coriander (Hara dhaniya) 
  • Cooking Oil

Making of Methi Muthia :
- Mix all the ingredients together.
- Bind them together to form a stiff dough. If too stiff add few tsp of water to loosen it up
  It should allow you to shape it into small sausage shaped pieces or any shape you desire. 

- Deep fry them in oil until golden brown.


Making Stuffed Green Chili
- Wash green chili and make slits
- Add red chili powder, turmeric powder, mango powder, coriander powder and salt to it.
- Add gram flour to it and mix well.
- The stuffing is ready.
- Stuff the green chilies with prepared stuffing.
- Steam Stuffed Chilies.



Making Stuffed Banana
- Cut Banana in 2 same half size
- Add red chili and garlic paste ,turmeric powder and salt to it.
- Add gram flour to it ,
Add chopped Coriander and mix well.
- The stuffing is ready.
- Stuff the banana with prepared stuffing.
- Steam Stuffed Banana



Making of Undhiyu
- take Oil into Pan and Heat Oil
- fry potato and eggplant
- cut the mix vegetables and boil
- Add Indian Spices , salt , some water and mix well
- Add prepared "Methi Muthiya" , Cook for 2 minute.
- Add " stuffed banana" and " stuffed green chili"
- Cook around 5 - 8 minutes.

Uttarayan Special Kathiyawadi Undhiyu is ready to serve.
