This recipe is very healthy and full of nutritious as contains green Vegetables. Mostly people make this in Winter as most of the ingredients are easily available and very fresh. Winter special Recipe.
 

    
                            

Ingredients :
- 2 Baingan (Brinjal  / Eggplant)
- Chopped Spring Onion
- Chopped Tomato
- Green Garlic
- Chopped Coriender leaves (Dhaniya)
- Oil
- Ginger red chilli paste
- Jeera (Cumin)
- Turmeric powder
- Salt to taste
- Heeng (asafoetida)

Preparation:
- Grease the brinjal with a little oil 

- Make Slits on eggplant with knife
- Turn on gas flame and Roast Baingan.
 
- Roast it with rotate frequently
 
- Roast till the brinjal turns soft and black around 10-12 minute.
 
- Peel the skin and mash well
- Heat pan and add oil and add Jeera (cumins) , Hing (asafoetida), Green garlic, Spring onion ,Turmeric powder , salt as per taste and Red chilli paste and mix well.
 
- Add Chopped Tomato , Mashed Brinjal and cook for around 5 to 7 minutes.
 
- Add Chopped hara dhaniya (Coriander leaves) for garnishing. 

- Serve hot with Bajri (millete floor flat bread) , Butter milk and roasted papad.
